Ingredients

- 2 cups fresh spinach

Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add diced potato and vegetable broth, bring to a boil.
- Reduce heat and simmer until potato is tender.
- Add spinach and cook for an additional 5 minutes.
- Blend the soup until smooth.
- Season with salt and pepper before serving.
