Quinoa Cranberry Salad: 5 Ways to Ignite Your Taste Buds

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped parsley
  • 1/4 cup feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine quinoa, cranberries, walnuts, parsley, and feta.
  7. In a small bowl, whisk together olive oil, lemon juice, and salt.
  8. Pour the dressing over the salad and toss to combine.
  9. Serve chilled or at room temperature.
