- 1 lb chicken fillet, diced
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 1 cup brown rice, uncooked
- 2 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned.
- Add broccoli and bell peppers; sauté for 5 minutes.
- Stir in garlic powder, onion powder, salt, and pepper.
- Add brown rice and vegetable broth; bring to a boil.
- Cover and reduce heat; simmer for 20 minutes.
- Fluff rice and serve hot.

- Feel free to substitute chicken with tofu for a vegetarian option.
