Instructions
- Preheat grill to medium heat.
- In a bowl, mix veggies with olive oil, cumin, and chili powder.
- Grill the veggies for 5-7 minutes until tender.
- Warm tortillas on the grill for about 1 minute.
- Assemble tacos by adding grilled veggies and avocado to tortillas.
- Garnish with cilantro and serve with lime wedges.
