Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Add diced bell peppers and spinach, sauté until soft.
- Pour in the egg mixture and scramble until fully cooked.
- Remove from heat and fill each tortilla with the egg mixture.
- Wrap the tortillas tightly and serve warm.

- Feel free to add cheese or other veggies.
- This can be made ahead and stored in the fridge.
