Corn & Black Bean Quesadillas: 7 Deliciously Quick Steps

Ingredients

  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix corn, black beans, cheese, cumin, chili powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet.
  4. Spoon the filling onto half of the tortilla.
  5. Fold the tortilla over and cook until golden brown, about 3-4 minutes.
  6. Flip and cook the other side until golden brown.
  7. Remove from skillet and repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.

Notes

  • Serve with salsa or guacamole.
  • Use whole wheat tortillas for a healthier option.
