- 1 cup corn, drained
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese
- 4 flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a bowl, mix corn, black beans, cheese, cumin, chili powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Spoon the filling onto half of the tortilla.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden brown.
- Remove from skillet and repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Serve with salsa or guacamole.
- Use whole wheat tortillas for a healthier option.
- Customize with additional vegetables if desired.
