- 8 oz rice noodles
- 1 cup cucumber, julienned
- 1 cup carrots, shredded
- 1/2 cup red bell pepper, sliced
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/2 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
Instructions
- Cook rice noodles according to package instructions.
- Rinse noodles under cold water and drain.
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger.
- Toss the cooled noodles with the sauce until well coated.
- Add cucumber, carrots, bell pepper, green onions, and cilantro.
- Mix everything together gently.
- Serve chilled and enjoy.
Notes
- You can add chicken or tofu for extra protein.
- Adjust the thickness of the sauce with water if needed.
- Store leftovers in the fridge for up to 2 days.
