- 1 medium head of cauliflower, riced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Rinse and rice the cauliflower using a food processor or grater.
- Heat vegetable oil in a large skillet over medium heat.
- Add garlic and sauté for 1 minute.
- Add riced cauliflower and mixed vegetables; cook for 5-7 minutes until tender.
- Push the mixture to one side of the skillet and pour in the beaten eggs. Scramble until cooked.
- Combine everything in the skillet and add soy sauce, salt, and pepper. Stir well.
- Garnish with chopped green onions before serving.
Notes
- Use fresh cauliflower for the best texture.
- Feel free to add your choice of protein.
- Adjust soy sauce according to your taste.
