Campfire Soup: 5 Steps to a Soul-Warming Delight

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup corn
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over campfire.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add broth, tomatoes, green beans, corn, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Season with salt and pepper.
  7. Serve hot and enjoy.
